North Shore Boulangerie brings out best in baking in Shorewood

SHOREWOOD – This baker has a Ph. D. in yeast.

No, seriously, he does.

When North Shore Boulangerie owner and head baker Gene Webb moved to Carnegie Mellon University to study yeast genetics, he didn’t plan for what has now become his second career.

“I didn’t have baking in mind at that early point in my life. As a child I baked, but they weren’t connected in my mind at that point,” Webb said. “Yeast is a classic organism for study. People might find it unusual to hear, but a lot of what we know about cancer biology is from yeast.”
